chop the veggies, stir fry, add the plant based stuff, keep stir frying. Now pour over your egg whites, season to taste and sprinkle on cheese or plant based cheese, cook on low, then fold over and heat through until it's all cooked.
You'll be left with a delicious omelette that is fluffy in the middle, healthy as all get out, and you can wrap some in a thin wrap to make it a burrito, splash on a little texas pete and your good to go!!
You can literally just spread on Marmite at the end or throw some in the omelette to taste, can't go wrong!
